Extra NEW recipe this week… well it’s Christmas! What do you think to this refind sugar free and dairy free dark chocolate almond butter bark with cherry and coconut? I had you at CHOCOLATE right? So for chocaholics the world over, this one’s for you. There’s nothing wrong with good quality dark chocolate. Raw cacao is packed full of antioxidants but it’s the sugar and goodness knows what else emulsifiers and additives that come in cheap chocolate that simply don’t do us any favours.

This week, I’m going all out with Christmas LOVE and sharing a full week’s worth of healthy, homemade, edible gifts that you can make for your loved ones this festive season. You could even make it fun and create a jigsaw with it, though mine would be a pretty useless one as I’d nibbled half of the puzzle before it got to the table! Please keep sharing your pictures of my recipes with me on Instagram, I love seeing all your creativity.

Serves 3 – 4


  • 110g cacao butter
  • 70g cacao powder
  • 1 tablespoon of honey (or to taste)
  • 1 tablespoon of smooth almond butter
  • Pinch of salt (but only if the almond butter is without salt)
  • 8 fresh cherries
  • 20g of coconut chips


Fill a pan with an inch of boiling water. Add the cacao butter to a heat proof bowl and place into the pan. On a low heat, stir the cacao butter until fully melted. (Make sure the water doesn’t spill over into the chocolate.)

Sieve the raw cacao powder and fold in the cacao butter until combined. Stir in a little honey to taste, the almond butter and optional salt. Taste and check it’s to your desired sweetness.

Prepare the cherries by removing the talks and stones and cut into chunks.

Line a baking tray with greaseproof paper. Pour in the dark chocolate and spread so it’s about half a centimetre thick.

Top with chopped cherries and coconut chips.

Place in the freezer for 30 minutes to set.

Smash with a rolling pin into chunky pieces. Place in a gift bag. Add a personalised tag and seal with some festive twine and holly. Happy faces all round.
