A healthy twist on toffee apples! These dark chocolate apples with pistachio and coconut are the perfect healthy bonfire night treat. Ditch the sugar filled toffee in favour of some antioxidant boosting dark chocolate and then sprinkle on some glam! To make these a real show stopper for Bonfire night, replace the stick with a sparkler, but make sure you don’t touch it afterwards… A+E will be busy on bonfire night!

Makes 6 dark chocolate apples
- 6 apples
- 300g dark chocolate (I like to use one that doesn’t use refind sugar like Montezuma’s 100% dark chocolate and add a touch of honey to taste)
- 40g of shelled pistachios
- 2 tablespoons of coconut chips
Fill a pan with an inch of boiling water. Add the dark chocolate to a heat proof bowl and place into the pan. On a low heat, stir the chocolate until fully melted. (Make sure the water doesn’t spill over into the chocolate.)
If using 100% dark chocolate, stir in a little honey to taste.
Place a wooden skewer in the top of each apple.
Dunk the apples one by one in the chocolate and roll in crushed pistachios and coconut chips.
Place on a baking tray and pop into the fridge for about 15 minutes to set.
Any left over chocolate can be poured into chocolate moulds and placed in the freezer to set and enjoy later.
