How super cute are these courgettes in blankets? These bite-sized beauties are my healthy take on pigs in blankets. Perfect finger food for the Christmas buffet.

Mini roasted courgettes wrapped in thin, crispy layers of 100% natural, preservative free parma ham from Prosciutto di parma. Quick and simple to make and so tasty you’ll be making them time and time again. Oh and thanks to the sulphite free parma ham they’re free from the top 14 allergens and autoimmune friendly.

Ingredients

  • 320g mini courgettes
  • 1 packet (6 slices) of preservative free Parma Ham
  • 2 tablespoons of Olive oil
  • Pinch of Pink Himalayan or sea salt

Method

Preheat the oven to 190C (fan assisted.)

Place the courgettes on a baking tray. Coat in 2 tablespoons of olive oil and roast in the oven for 15 minutes. After this time, wrap half a slice of parma ham around each courgette and place back in the oven for 20 minutes until the ham is all crispy and delicious.

That’s it. Super simple. Now who said Christmas cooking was stressful.

Free from Christmas

This courgettes in blankets recipe is part of a ‘Free From’ Christmas challenge some of my dearest foodie friends set ourselves to help inspire you guys following free from diets and show that even if you’re missing a few ingredients you can still enjoy wonderful Christmas food, you just got to get creative!

We decided to create a virtual allergy friendly christmas table. All our dishes are free from the top 14 allergens. Not everyone’s is Paleo or sugar free like mine though so please take note of the ingredients if you are. Over the next two weeks we’re all taking it in turns to post a recipe to bring to the free from buffet. Now this is one party i’m not missing out on this festive season. Who’s coming along? Don’t forget to share your pics if you make my recipe on Instagram, I love seeing tCourgettes in blankets, zucchini, courgettes, pigs in blankets, Christmas food, food photography, Paleo Crust, free from food, finger food, healthy foodhem.

We want to show that you can still enjoy delicious, free from food at Christmas and what’s more, it’s easy to make and a whole heap of fun.

My food philosophy is all about awakening a carefree, happier, healthier you whilst reducing inflammation and toxins in the body. I believe the secret to radiant health starts and ends with a super strong gut so my recipes are all grain, gluten, dairy and refined sugar free. I want my blog to show how simple and tasty healthy food really is and by using a little imagination, you can still enjoy all your ‘crust’ food favourites without feeling bored or deprived. I’m here to show you that eating low starch paleo is so much more than just bland meat and overboiled veg!

  1. SO my kind of food!! I’m paleo too (well around 95% of the time), and more than anything else love the simplicity of eating natural food. Great recipe 🙂

Hey Renee, I’m so pleased you like them and I’m so excited to meet another Paleo foodie. That’s super exciting. Can’t wait to check out some of your recipes. Jo x

  2. I love, love, love it hun! I love bacon but find pig in blankets greasy and quite unsightly if I’m honest. Your healthier version looks far more appealing and I love it! Thanks so much for taking part in this challenge and creating such a great ‘free from’ dish. I’ll definitely be making these courgettes in blankets for Christmas. xx #FreeFromChristmas

ah so pleased you like them Mel. Yes pigs in blankets can be a bit greasy if you don’t get a good quality sausage with a lower fat content. These are definitely a lighter option. I’m so pleased you invited me to take part in this #freefromchristmas buffet. I love it. Can’t wait to do more #freeform collaborations and fun next year. Jo xx

  3. I love this idea! It’s so simple and easy. Can I just ask…are sausages off the menu for you? I’m trying to get back into a grain free way of living but can’t quite seem to get there!

Hey Vicki, so pleased you like them. Oh how exciting you’re trying grain free. It’s changed my life beyond belief. Baby steps hun, you’ll get there. I passionately believe health starts and ends in the gut and ditching grains can help with this. Here’s to lots of creative cooking together. No i still eat sausages, just make sure they are good quality and without grains, so pure meat. I was just having a bit of fun with this recipe and going for something different. Jo x
