I wanted to say a big hello and thank you to all my new followers by sharing today’s red cabbage slaw and tahini dressing recipe. I’m so glad you found my blog. You guys are amazing.
I’m Jo and I live in the big smoke, London! I live in gym gear, probably blinding people with my bright and summery colours. Some people call me sporty, I call myself a fidget pants that can’t sit still! I’m either creating a mess and rustling up one of my epic cookathons and recipe testing, scraping cauliflower rice and courgetti peelings off the kitchen tiles or zipping around on my bike, slightly concerned that one day I may flop over at a traffic light as i’m probably carrying half a tonne of veg in my rucksack. I’m the loony tune that gets weird looks in the supermarket as I check out 10 cauliflowers and 10 celeriacs… and that doesn’t even cover me a week!
10 years ago I was diagnosed with an autoimmune disease called Ankylosing Spondylitis and 3 years ago i’d hit my rock bottom. I didn’t know what I could and couldn’t eat I just knew certain things made my pain a whole heap worse. Thankfully today, I’m in remission, have been for over 3 years now and that’s as a result of a radical change in diet, my determined ant like personality and a good dollop of creative sparkle… which today I hone into my cooking.
My goal in life is to now help others, amazing people like you, to feel full of energy every day, and if like me you suffer from an autoimmune disease, help you put it in remission.
I love what i’m doing now, i’m never happier than when I know i’m helping people feel better through the healing power of food. One of my favourite salads today. This summer red cabbage slaw with tahini dressing goes with everything. Pair with a nice slice of one of my paleo pies and that’s dinner sorted.
- 1/3 red cabbage
- 2 carrots
- 1/3 pointed cabbage
- 1/4 celeriac
- Handful pumpkin seed
- 1 tablespoon sesame seeds
- 1 tablespoon chopped fresh parsley
- 2 tablespoons tahini
- 2 tablespoons extra virgin olive oil
- 2 tablespoons water
- Juice of 1/2 lemon1 teaspoon apple cider vinegar
- 1 teaspoon fresh chopped parsley
- Pinch pink himalayan salt
- Pinch coarse black pepper
Using a food processor or mandolin shred the cabbage and carrots into thin strands. I used the julienne blade on a Magi Mix. Transfer to a bowl and scatter with pumpkin and sesame seeds.
Prepare the dressing my mixing all the tahini dressing ingredients together in a bowl and mix well. I used a Jamie Oliver Flavour shaker Maker. Totally recommend you get one if you’re a fan of dressings. It really helps the ingredients blend well together. They’re not much about £8 off amazon and I used mine all the time.
Pour the dressing onto the red cabbage slaw and mix well. Sprinkle fresh parsley to serve. It’s really that easy. Send me a message, let me know what you think.
