Hey guys, have I got a treat for you today to close my week of seasonal eating inspiration? This open almond pancake with a spicy sausage crumb is so tasty and ready in super speedy time.
The secret to mouthwatering success is to get good quality sausages, without gluten or preservatives. If you live in London, Wholefoods in High Street Kensington is one of the best. They have a sausage counter, all locally sourced and the lowest fat content I’ve found. They’re pretty much just pure meat. Plus that place is like healthy food porn heaven. Trying to juggle all my bags on the bus is always a calamity of hilariousness as I take out a few people unwilling to leave any of my treats behind. Moen and Sons in Clapham Common is also fantastic, the most awesome butchers this side of the river. Alternatively, take a trip to your local butchers and ask them if they do gluten free? They can normally make them for you if they don’t have any ready.
I hope you’ve enjoyed my seasonal eating inspiration this week. Wrapping it up today with tomatoes. Wanted to end on a personal note as this breakfast almond pancake recipe is a symbol of my healing. There was a time 3 years ago when even a sniff of a tomato or pepper would my bladder in a screaming frenzy of pain. I’d lie awake all night feeling like someone was sandpapering the inside. But today I munch on them happily. This is a huge step, and it’s all thanks to healing my gut.

- 2 eggs
- salt and pepper
- 2 tablespoons ground almonds
- 1 tablespoon coconut oil or ghee
- 2 herby flavoured sausages (ie Toulouse)
- 1 small onion
- 1 pointed sweet pepper
- 1 carrot
- 1 celery stick
- 6 sweet cherry tomatoes
- 1 teaspoon paprika
- salt and pepper
- 1 tablespoon olive oil
- 1/2 avocado
- 1 tablespoon extra virgin olive oil
- Squeeze lime
- 1/2 teaspoon apple cider vinegar
- Salt and pepper to taste
Prepare the vegetables by peeling the onion and carrot and chop all into small cubes.
For the avocado cream, simply blitz all the ingredients together with a hand blender or fork. Place to one side.
Heat a frying pan on a medium heat and coat with a little oil to prevent sticking. Remove the sausage meat from the casing and dry fry for a 2 minutes minutes, breaking the meat up as you go with a spatular until it forms a meaty crumb. Add the vegetables and olive oil and continue to sauté on a low heat until cooked through. Season with paprika, salt and pepper to taste.
Meanwhile, prepare the pancake. Crack the eggs into a bowl, season with salt and pepper and ground almonds. Mix.
Heat a frying pan with chosen fat, pour in the grain free pancake batter and cook on a medium heat for about 2-3 minutes each side.
Transfer to a plate, top with sausage crumb and avocado cream. Oh I could eat it all over again right now!
